CCW April update
Hi Chefs,
We had a great night at the last meeting at Siwanoy Golf Club. Special thanks to General Manager David Cecil and Executive Chef Anibal Romero. What a great dinner provided. I think everyone loved the presentation of the goldfish swimming in the glass served with the ceviche. I attached a picture for those who could not attend.
Many thanks to everyone who participated in the annual vendor show held at Glen Island Club. I received many compliments from Managers and Vendors saying "best food we have ever done for this event"! for that I would like to thank Chef Lenny for all the organization and making the event happen!
I have been asked to reach out and see if any Chefs who would be willing to come and address inquiries about career pathways in the hospitality/food and beverage at BOCES. The event will be held on April 25, please reach out to Amy at 914-248-2438 if you would like to volunteer.
The next meeting will be held at The New York Athletic Club, Travers Island. The date is Tuesday April, 11 at 6:00 PM. We have a great line up for the education. We have Calvisius Caviar that is harvested in Calvisano Italy coming to do a side by side tasting of different types and different grades of Caviar. The tasting will be paired with Ca' del Bosco sparkling wine, they are bringing a different wine that pairs up each caviar. It is the Champagne of Italy! Following the education and meeting, Chef Andrew has an amazing menu highlighting a few courses with the caviar also!
