September 2012 Newsletter


Dear Fellow Club Chefs,

I hope that this newsletter finds all of you well now that we are finally at a slower time in our seasons. We are currently working on our education schedule for the rest of the year. If anyone has any suggestions please direct them to Lenny Phillips our Education Chairman. I am also happy to announce that Mike Dolan has agreed to be our new Membership Chairman. Many thanks to all who have worked so hard to make us a GREAT organization.

I would like to thank General Manager Az-dine Boucetta and Executive Chef Fay Reyes and her entire staff, as well as Argentine Asados Chefs James and Diego for an amazing BBQ dinner at The Mill River Club. The two different styles of BBQ were amazing. Thanks Blake for helping us on this one.

On October 9th the CAWLC is having Taste Our Local Harvest which is a farm to table event at Westchester Country Club. This event is starting at 7pm and sponsored by Food Bank of Westchester, Slow Foods and local farmers. This event is a way to connect Chefs with farmers so that we can build relationships with local farms and support farm to table cooking. Our annual educational trip this year is to Italy. Mike Dolan and John Krall have been working on this event for months and we finally have a preliminary Itinerary. The trip begins on Jan 6, 2013 and we will be visiting Rome and Sorrento. We are limited to only 16 Chefs so please RSVP to me at Chefpsh@yahoo.com or Mike Dolan at mikechef1@msn.com ASAP

Our annual Gasse Family Trust Golf Outing will be held on Oct. 15, 2012 at Waccabuc Country Club. The event is hosted by Executive Chef Tony Nunes, we will be having breakfast at 8 :00 am with Shotgun at 9-9:30 am depending on course conditions. The cost of the event is $175.00 per golfer .

The price of the BBQ at 3pm is $60.00 for those guests that don’t play golf. This is a great event for a great cause so please invite your GM your family and friends to support this worthy cause.

We are limited to only eighteen foursomes so please contact Tony or Lenny Philips ASAP. Tony is asking for donations for our charity raffle. Please try to bring a bottle of wine, a golf club, a foursome.etc.etc. All of the proceeds will go directly to the Gasse family.

Lastly, our next meeting will be on October 23, at 7pm, at The American Yacht Club hosted by Executive Chef Maurice Hurley. Hope to see you there.
