Dear Club Chefs:
A great deal of thanks to General Manager David McLaughlin, Executive
Chef Quint Smith and the entire staff of the Mill River Club for
ensuring that the meeting on October 3rd was a success. We had a
strong turnout. In attendance were many Long Island Club Chefs,
guests of Blake Verity, who would like to join our association.
Aaron Isaacson of Mr. Recipe and Al Wainer of the Lucas Group artfully
educated us on their products.
On Tuesday,
October 24th, Marc Sarrazin and Doug Rodda of De Bragga and Spitler
have scheduled a field trip for the Club Chefs of Westchester. We
will meet at 7:00 AM at the Scarsdale Golf Club to board a bus to
start our tour. Plume de Veau in Brooklyn will be our first destination.
From there, we will travel to De Bragga and Spitler for another
guided tour. At approximately noon, we will have lunch at Pastis
which is a pleasant restaurant within walking distance from De Bragga.

Thank you in advance to all the Club Chefs participating in the
Jansen Hospice Fundraiser to be hosted on Wednesday, October 25th
by General Manager Lori Sahagian and Executive Chef Mike Dolan at
the Bronxville field Club.
Our Annual Family Christmas Party in conjunction with the MCMA will
be held at the Coveleigh Club on December 18th. The cost is $50
per adult and $15 per child between 3 and 14 years old. Please contact
me at (914)723-2840 ext. 230 to reserve. The evening will begin
at 6 PM. Payment in advance is required.
In January 2007,
our culinary destination will be Peru. We will be departing on the
13th of January. Anyone interested in participating in the trip
should inform me as soon as possible.
Our next meeting
will be at the Metropolis Country Club in White Plains, New York
on November 7th. It starts at 6 PM. Please advise Chef Lorcan O’Connell
if you plan to attend at (914) 949-4840.
Also, remember out of respect for the chefs and the clubs that host
our meetings to either turn your cell phone off or put it on vibrate.
