Dear Club Chef,
Last Tuesday,
we were graciously hosted at the Lotos Club by the General Manager
John Mc Grath, the Assistant General Manager John Donovan, the Executive
Chef Raymond Hollanda and their entire staff. There, we had the
pleasure to have a very interesting and captivating seminar by David
Arnold and Jim Joseph of the French Culinary Institute. Their lecture
on technological advancement in the kitchen environment was followed
by a wonderful luncheon from Chef Raymond. From the hors d'oeuvres
to the dessert, Raymond and his staff kept on teasing and satisfying
our gastronomic senses. It was unfortunate that so many of the club
members were not in attendance.
Please try to attend those 3 or 4 hours a month we get to spend
together at the meetings. It is very encouraging when there is a
good turn out at any particular gathering, especially when so many
preparations are made—not just by the hosting chef, but also
by the speakers who take the time out of their schedules for our
benefit.
The board has sent out a revised list of outstanding charges. Please
submit payment upon receipt to your club’s accounting department
for prompt payment. We thank you in advance for your cooperation.
We also suggest and recommend payments to be made in advance at
all times.
Our June Dinner will be on June 6th at 6:30 pm. The location has
been changed. We will be going to the Sterling Inn in New Rochelle
which will be an easier access for our members coming from areas
other than Westchester and Connecticut.

The cost
of the dinner is $85.00 per person. I encourage you to bring your
partner! Please call me by June 2nd to let me know if you plan on
attending and how many will be in your party.
The annual golf outing will be at Morefar on September 11th.The
cost is $ 160 per person. It will include lunch from 12 noon to
1pm, refreshments on the course and barbecue and spirits after golf.

Congratulations to Mr Victor Boyd who has become a member of the
CMAA, and I want to take this opportunity to welcome this particular
fore father of our association as an honorary member of the CCW.
Now that the busy season is practically upon us, the board and I
wish you a great summer. Our next meeting will be at Quaker
Ridge Golf Club on September 12th at 6:00pm. Out of courtesy,

reserve.
Also, remember out of courtesy for the chefs and the clubs that
host our meetings, that your cell phones should be either off or
on vibrate.
