Newsletter: February, 2008

Dear fellow Club Chefs,

Thanks to everyone who attended our January meeting at North Hills CC in Manhasset Long Island and showing support for the first meeting of the new year. Special thanks to the General Manager Michael Bo Mengo, Club House Manager Charles Jardinia, Dining Room Manager Emilio Balestri, Executive Chef Andrew Krug and the entire staff at North Hills for hosting the Club Chefs. Although the clubhouse was under renovation, Andrew and his team managed to provide us with a memorable culinary experience to start the year on the right track.

Educationally contributing to our meeting was Lisa Petrucco from Rougie foie gras manufacturers and Daniel Scovatti and Edward Feron of the Chefs Warehouse. Lisa spoke at great length about the history and the usefulness of foie gras. We were then treated to some of the exquisite product.

At the meeting, we discussed replacing the treasurer of our upcoming board. Unanimously accepted as the new treasurer is Joseph Guerra of Cold Spring Harbor CC. Joe is very enthusiastic and is looking forward to fulfilling his duties on the new board. Congratulations Joe and thank you. So to recap, the new board consists of Eddie Loayza – President, Michael Dolan- Vice President, Joe Guerra- Treasurer and Raymond Hollanda- Secretary.

I would like to acknowledge and thank the present board for their hard work and support. Secretary Steve Lustig, treasurer Joe Doering and the former president Jacques Larsen. It has been an honor and a pleasure serving with you for the past two years. Serving as president for only the last few months, I think it would be proper that Jacques who had served as president for most of our term finish this newsletter.

"I want to thank my board and the membership for being very supportive during my tenure. It was an honor serving as your president. I will always remember the wonderful moments that we had and the varied cuisines we experienced. I look forward to seeing you all and sharing the vision of the new board of the club chefs."
