Hello Fellow Chefs,
Our Next meeting is at the Waccabuc Country Club on Tuesday October 11 at 11:00 am Hosted By Executive Chef Tony Nunes.

The education will be Presented by Culinary Institute of America Instructor Chef William Phillips. He will Demo a dish from the Yucatán called Cochinita Pibil. He will also demonstrate making fresh masa for tortillas using Mexican field corn and the pressing and cooking of them, as well as a demo on using instant masa. This will be followed by a meeting and Chef Tony’s great lunch. Discussion of the trip to France will be part of the meeting as well as proposing the new board for next year. Please reply to this e mail with your RSVP so Chef Phillips can prepare enough of the dish he will be demonstrating. It would help Tony a great deal also.

Recipes will be handed out with the demo.
